80 Acres Farms Caesar Salad

CAESAR SALAD - ON THE GO!

INGREDIENTS:

FOR SALAD:
  • 4 oz 80 Acres’ FOREVER SUMMER
  • 80 Acres’ FIREWORKS TOMATOES, halved
  • ½ cup vegan Caesar dressing
  • 2 hard-boiled eggs, halved
  • 1 boneless chicken breast, cooked and sliced
  • ¼ cup walnuts, chopped
FOR DRESSING:
  • ½ cup cashews, soaked and drained
  • 1 garlic clove, chopped
  • 1/3 cup lemon juice
  • 3 Tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp capers
  • ¼ tsp sea salt
  • ¼ tsp black pepper

DIRECTIONS:

FOR THE SALAD:
  1. Layer mason jar with dressing on the bottom, to avoid wilted and soggy toppings.
  2. Add toppings and lettuce to the jar then seal.
FOR THE DRESSING:
  1. Soak cashews in water overnight and then drain.
  2. Combine all ingredients in a blender until smooth and creamy.
  3. Adjust the seasonings, to taste. Adjust consistency by adding water.
