80 Acres Farms Buddha Bowl

POWER CRUNCH BUDDHA BOWL

INGREDIENTS:

FOR BOWL:
  • 4 oz 80 ACRES FARMS POWER crunch
  • sweet potato, roasted
  • 1 bunch rainbow carrots, shaved
  • ½ cup brown rice, cooked
  • ½ cup chickpeas, drained and rinsed
  • 1 beet, sliced
FOR DRESSING:
  • ¼ cup extra-virgin olive oil
  • 1 Tbsp lemon juice
  • .5 oz 80 Acres’ all about that BASIL, optional

DIRECTIONS:

FOR THE BOWL:
  1. Pre-heat oven into 425°. Dice sweet potato to 1” pieces and drizzle with olive oil. Bake for 25 minutes. Flipping halfway. Let cool.
  2. Thinly slice beets and use a peeler to shave your rainbow carrots.
  3. Add all your ingredients to a bowl of POWER crunch and drizzle with dressing.
FOR THE DRESSING:
  1. In a small bowl add extra-virgin olive oil and fresh lemon juice.
  2. Lightly whisk. Add finely chopped basil.
