Ingredients

For the Salad

  • 4 oz. 80 Acres Farms POWER CRUNCH
  • 1 rotisserie chicken
  • 1 cup cooked farro try boiling in broth for extra flavor!
  • 1 large Honeycrisp apple sliced
  • 1 small butternut squash peeled and cubed
  • ½ cup dried cranberries
  • ½ cup pumpkin seeds
  • 1 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. cinnamon
  • Salt and pepper to taste

For the Dressing

  • 4 Tbsp. olive oil
  • 3 Tbsp. apple cider vinegar
  • 1 Tbsp. honey mustard

Instructions

  • Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  • Place the squash cubes on the baking sheet and toss with a drizzle of olive oil, cinnamon, garlic powder, salt, and pepper. Roast 20 to 25 minutes or until golden brown around the edges.
  • In 4 separate containers, divide ingredients equally to build your meals.
  • Combine dressing ingredients and whisk until combined. Divide into 4 containers to pair with each meal.
