2celery ribssliced plus more for dipping if desired
3-4cupscauliflower florets
1can chickpeasdrained, rinsed, and patted dry
½cupbuffalo sauce
¼head red cabbagethinly sliced
¼cupblue cheesecrumbled
your favorite blue cheese dressing
Instructions
Preheat oven to 425°.
Place cauliflower and chickpeas on a baking sheet. Coat with olive oil. Roast for 20 minutes. Remove from oven and pour on buffalo sauce. Toss to coat. Roast for another 10-15 minutes, until chickpeas are crispy.
