4 oz 80 Acres Farms FOREVER SUMMER

1 snacking cucumber, quartered

2 celery ribs, sliced plus more for dipping, if desired

34 cups cauliflower florets

1 can chickpeas, drained rinsed, and patted dry

1/2 cup buffalo sauce

1/4 head red cabbage, thinly sliced

1/4 cup Bleu cheese, crumbled

Bleu cheese dressing


  1. Pre-heat oven to 425°.
  2. Place cauliflower and chickpeas on a baking sheet. Coat with olive oil.
  3. Roast for 20 minutes. Remove from oven and pour on buffalo sauce. Toss to coat. Roast for another 10-15 minutes, until chickpeas are crispy.
  4. Layer all ingredients in 2 bowls of FOREVER SUMMER.
  5. Drizzle with dressing and enjoy.
