GOLDEN SALAD

This vegan salad is packed with detoxifying cruciferous veggies and feel-good ingredients. After a weekend binge, this raw cauliflower salad is just what you need to get back on track.

FOR THE SALAD

4 oz 80 Acres Farms POWER CRUNCH

1/4 cup golden raisins

1/4 cup rainbow cauliflower, sliced into small florets

1/4 cup raw cashews

FOR THE DRESSING

1/2 cup raw cashews, soaked for  30 minutes, drained

1  lime, juiced

3/4 cup extra virgin olive oil

1/4 cup  apple cider vinegar

1 garlic clove, peeled

1 thumb-sized piece of ginger, peeled

1 tsp ground turmeric

1 tsp  maple syrup

pinch of salt

Instructions

FOR THE SALAD

  1. Add all salad ingredients to a bowl of POWER CRUNCH.
  2. Drizzle with dressing and enjoy.

FOR THE DRESSING

  1. Add all dressing ingredients to a blender.
  2. Blend until smooth and creamy, adding water to desired consistency. Set aside.
  3. Refrigerate unused dressing in an airtight container for up to 5 days.
