GOLDEN SALAD

This vegan salad is packed with detoxifying cruciferous veggies and feel-good ingredients. After a weekend binge, this raw cauliflower salad is just what you need to get back on track.

FOR THE SALAD:

4 oz 80 Acres Farms POWER CRUNCH

1/4 cup golden raisins

1/4 cup rainbow cauliflower, sliced into small florets

1/4 cup raw cashews

FOR THE DRESSING:

1/2 cup raw cashews, soaked for 30 minutes, drained

1 lime, juiced 

3/4 cup olive oil

1/4 cup apple cider vinegar

1 garlic clove, peeled

1 thumb-sized piece ginger, peeled 

1 tsp ground turmeric 

1 tsp maple syrup 

Pinch salt

Instructions

FOR THE SALAD:

  1. Place the POWER CRUNCH in a bowl, then layer all ingredient on top.
  2. Drizzle with liquid gold dressing and enjoy.

FOR THE DRESSING:  

  1. Place all ingredients in a high-speed blender and blend until ultra-smooth and creamy.
  2. Add water, for desired consistency.
  3. Transfer to a sealed glass jar and refrigerate for up to 5 days.
