GOLDEN SALAD

FOR THE SALAD

4 oz. 80 Acres Farms POWER CRUNCH

1/4 cup golden raisins

1/4 cup rainbow cauliflower, cut into small florets

1/4 cup raw cashews

FOR THE DRESSING

1/2 cup raw cashews, soaked

1 lime, juiced

3/4 cup olive oil

1/4 cup apple cider vinegar

1 garlic clove, peeled

1 thumb-sized piece fresh ginger, peeled

1 tsp. ground turmeric

1 tsp. maple syrup

Pinch of salt

Instructions

  1. Soak 1/2 cup cashews in water for 30 minutes, then drain. Add cashews and remaining dressing ingredients to a blender.
  2. Blend until smooth and creamy, adding water to reach desired consistency. Set aside.
  3. Add POWER CRUNCH salad to your serving bowl. Layer in raisins, cauliflower, and raw cashews.
  4. Drizzle with dressing and enjoy!

Notes

Refrigerate unused dressing in an airtight container for up to 5 days.
