PESTO CHICKEN SKEWER

Our favorite summer flavors stacked on a skewer are excellent for your next BBQ or summer picnic.

FOR THE PESTO:

2 oz 80 Acres Farms ALL ABOUT THAT BASIL

2 garlic cloves, peeled

1/2 tsp sea salt

1/3 cup extra virgin olive oil

1 Tbsp lemon juice

1/3 cup raw pine nuts

1/3 cup grated Parmesan cheese

FOR THE SKEWERS:

80 Acres Farms FIREWORKS TOMATOES

3 boneless chicken breasts, cubed

Wooden skewers

Instructions

FOR THE PESTO:

  1. Combine all ingredients in a food processor until finely minced.

FOR THE SKEWERS:

  1. Marinate cubed chicken in half of the pesto for at least 2 hours.
  2. Soak skewers in water for 30 minutes.
  3. Thread chicken pieces and tomatoes on skewers.
  4. Fire up your grill until it reaches medium-high heat.
  5. Place prepared skewers on an oiled grate and grill for 5-7 minutes on each side until the chicken is no longer pink.
  6. Baste your chicken with extra pesto for supreme flavor.
