Ingredients
FOR THE SALAD

golden raisins
¼
cup
rainbow cauliflower
cut into small florets
¼
cup
raw cashews
FOR THE DRESSING
½
cup
raw cashews
soaked
1
lime
juiced
¾
cup
olive oil
¼
cup
apple cider vinegar
1
garlic clove
peeled
1
fresh ginger
thumb-sized piece peeled
1
tsp.
ground turmeric
1
tsp.
maple syrup
Pinch
of salt
Instructions
Soak 1/2 cup cashews in water for 30 minutes, then drain. Add cashews and remaining dressing ingredients to a blender.
Blend until smooth and creamy, adding water to reach desired consistency. Set aside.
Add POWER CRUNCH salad to your serving bowl. Layer in raisins, cauliflower, and raw cashews.
Drizzle with dressing and enjoy!
Notes
Refrigerate unused dressing in an airtight container for up to 5 days.
