FOR THE BOWL

medium sweet potato
cubed and roasted
2-3
small rainbow carrots
shaved

cup
brown rice
cooked

can
chickpeas
drained and rinsed

pre-cooked beet
sliced
FOR THE DRESSING
¼
cup
olive oil

tbsp.
fresh lemon juice
½

Instructions
Pre-heat oven to 425°. Dice sweet potato into 1" pieces and drizzle with olive oil. Bake for 25 minutes. Flipping halfway. Let cool.
Cook rice according to package. Let it cool slightly.
In a small bowl, add extra-virgin olive oil and fresh lemon juice. Lightly whisk. Add finely chopped basil.
Add all salad ingredients to a bowl of POWER CRUNCH.
Drizzle with dressing and enjoy.
