FOR THE BOWL:

4 oz 80 Acres Farms POWER CRUNCH

1 medium sweet potato, cubed and roasted

23 small rainbow carrots, shaved

1/2 Â cup brown rice, cooked

1 can chickpeas, drained and rinsed

1/4 pre-cooked beet, sliced

FOR THE DRESSING:

1/4 cup extra-virgin olive oil

1 Tbsp lemon juice

1/2 oz 80 Acres Farms ALL ABOUT THAT BASIL, optional

Instructions

FOR THE BOWL:

  1. Pre-heat oven to 425°. Dice sweet potato into 1” pieces and drizzle with olive oil. Bake for 25 minutes. Flipping halfway. Let cool.
  2. Cook rice according to package. Let it cool slightly.
  3. Add all salad ingredients to a bowl of POWER CRUNCH.
  4. Drizzle with dressing and enjoy.

FOR THE DRESSING:

  1. In a small bowl, add extra-virgin olive oil and fresh lemon juice.
  2. Lightly whisk. Add finely chopped basil.
