ROMAINE CALM TACOS

Ingredients
FOR THE TACOS

snacking cucumbers
thinly sliced

rotisserie chicken
1
red onion
pickled

soft tortillas
4-8
fresh mint leaves
1
fresh jalapeños
thinly sliced
1
cup
plain Greek yogurt
fresh lime juice
FOR THE PICKLED ONIONS
1
red onion
thinly sliced
½
cup
water
½
cup
apple cider vinegar
1 ½
tbsp.
honey
1 ½
tsp.
sea salt
¼
tsp.
red pepper flakes
optional
Instructions
FOR THE TACOS
Debone and shred chicken.
Heat tortillas.
Assemble your tacos with chicken, ROMAINE CALM, pickled onion, cucumbers, and jalapeños.
Add yogurt, mint, and lime, as desired.
FOR THE PICKLED ONIONS
Thinly slice red onion and place in a mason jar.
In a pot, bring all remaining ingredients to a boil.
Pour the liquid over the red onions and seal the jar for 30 minutes.
Store in refrigerator for up to 1 week.
