ROMAINE CALM TACOS

Try a new twist on your Tuesday tacos by balancing sweet and spicy for an easy weeknight dinner!

FOR THE TACOS:

4 oz 80 Acres Farms ROMAINE CALM

2 snacking cucumbers, thinly sliced

1 rotisserie chicken, deboned and shredded

1 red onion, pickled

6†soft tortillas

48 mint leaves

1 fresh jalapeño, thinly sliced

1 cup Greek yogurt

lime juice

FOR THE PICKLED ONIONS:

1 red onion, thinly sliced

1/2 cup water

1/2 cup apple cider vinegar

1 1/2 Tbsp honey

1 1/2 tsp sea salt

1/4 tsp red pepper flakes, if desired

Instructions

FOR THE TACOS:

  1. Debone and shred chicken.
  2. Thinly slice cucumbers and fresh jalapeños.
  3. Heat tortillas.
  4. Assemble your tacos with chicken, ROMAINE CALM, pickled onion, cucumbers, and jalapeño.
  5. Add yogurt, mint, and lime, as desired.

FOR THE PICKLED ONIONS:

  1. Thinly slice red onion and place in a mason jar.
  2. In a pot, bring all remaining ingredients to a boil.
  3. Pour the liquid over the red onions and seal the jar for 30 minutes.
  4. Store in refrigerator for up to 1 week.Â
