Hot Honey Chicken Salad

HOT HONEY CHICKEN SALAD

This salad gives you the best of both worlds—sweet and spicy chicken tenders served over a fresh cool salad.

Ingredients

FOR THE MARINADE

  • 1 lb. chicken tenders
  • 1 cup milk
  • ¼ cup hot sauce
  • ¼ cup pickle juice
  • 1 tsp. garlic powder
  • 1 tsp. smoked paprika

FOR THE GLAZE

  • 6 tbsp. butter melted
  • 3 tbsp. honey
  • 2 tsp. cayenne pepper
  • 1 tsp. cornstarch
  • ½ tsp. chili powder
  • ½ tsp. smoked paprika
  • ½ tsp. garlic powder
  • salt to taste

FOR THE SALAD

  • 4 oz. 80 Acres Farms FOREVER SUMMER
  • 8-10 80 Acres Farms FIREWORKS TOMATOES halved
  • 8-10 pickle slices
  • ¼ red onion thinly sliced
  • 1 avocado diced
  • Favorite blue cheese dressing

Instructions

  • Whisk marinade ingredients together in a bowl. Place the chicken tenders in a plastic bag and add sauce. Marinate for at least one hour, up to overnight.
  • Preheat oven to 400°.
  • Place marinated chicken tenders onto parchment paper lined sheet pan and bake for about 10 minutes.
  • While you wait, combine all glaze ingredients in a bowl and stir.
  • Remove chicken, brush with glaze, then broil for about 3 minutes until slightly golden, watching carefully. Add more glaze after broiling if desired. Let chicken cool slightly.
  • Add all salad ingredients to a bowl of FOREVER SUMMER. Top with chicken.
  • Drizzle with dressing and enjoy immediately!
