Ingredients: 1 oz. 80 Acres Farms AMA-ZING ARUGULA microgreens; 1 medium ripe cantaloupe (cubed); ½ red onion (thinly sliced); 1/3 cup feta cheese (crumbled); ¼ cup olive oil; 1 large lemon (juiced); 1 tbsp. honey; Salt and pepper (to taste)

MELON HONEY SALAD

This refreshing Cantaloupe Summer Salad is the perfect dish to cool you off this summer, it’s a great addition to any of your grill outs!

Ingredients

For the Salad

1 oz. 80 Acres Farms AMA-ZING ARUGULA microgreens
1 medium ripe cantaloupe cubed
½ red onion thinly sliced
1/3 cup feta cheese crumbled

For the Dressing

¼ cup olive oil
1 large lemon juiced
1 tbsp. honey
Salt and pepper to taste

Instructions

In a serving bowl combine the cantaloupe, red onion, and feta cheese. Toss to combine and top with AMA-ZING ARUGULA microgreens.
Combine all the dressing ingredients, whisk or shake until blended. Pour over salad and enjoy!
