Ingredients

For the Salad

  • 4 oz. smoked salami sliced
  • ½ cup cherry tomatoes halved
  • ½ cup roasted red peppers sliced
  • ½ cup pepperoncini sliced
  • ½ cup chickpeas drained and rinsed
  • ½ cup fresh mozzarella pearls
  • ½ medium red onion thinly sliced
  • ¼ cup Kalamata olives sliced

For the Dressing

  • ¾ cup olive oil
  • ¼ cup red wine vinegar
  • 2 Tbsp. fresh lemon juice
  • ¼ cup Parmesan cheese grated
  • 1 tsp. dried parsley
  • 1 tsp. dried basil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • ½ tsp. dried oregano
  • ½ tsp. paprika
  • ½ tsp. pepper
  • 1 tsp. granulated sugar

Instructions

Prepare the Base

  • Arrange the lettuce in a large serving bowl as your foundation.

Layer

  • Arrange the salami, cherry tomatoes, roasted red peppers, pepperoncini, chickpeas, mozzarella pearls, red onion, and olives over the lettuce, creating an appealing visual presentation.
