Peach Caprese Salad

This Peach Caprese Salad is a simple, satisfying dinner that beats the summer heat. Juicy peaches and heirloom tomatoes are layered with hunks of creamy mozzarella and finished with a bright basil vinaigrette. Pair with grilled chicken or prosciutto for extra protein.

Ingredients

For the Dressing

  • 2 cups packed 80 Acres Farms BASIL
  • ΒΌ cup extra virgin olive oil
  • 2 tbsp. unseasoned rice vinegar
  • 2 tsp. honey
  • Salt and pepper to taste

For the Salad

  • 3 large ripe peaches sliced
  • 2 large heirloom tomatoes sliced
  • 8 oz. fresh mozzarella torn into chunks
  • Flaky sea salt and basil leaves for garnish

Instructions

  • In a blender, combine basil, rice vinegar, honey, salt, and pepper. Once blended, stream in the olive oil and stir until combined. If the dressing is too thick, thin with about a tablespoon of water.
  • Arrange the peaches, tomatoes, and mozzarella on a large serving dish. Drizzle with dressing and garnish with basil leaves and flaky sea salt.
