1 pizza dough, homemade or store bought
1/2cup fresh pesto1/2cup fresh mozzarella, grated
4ozmushrooms—portabella, cremini, oyster, sliced
2oz. 80 Acres Farms MICRO-TOPIA microgreens
Freshly shaved parmesan to garnish
FOR THE PESTO
2cups80 Acres Farms ALL ABOUT THAT BASIL
1/3cupParmesan cheese, grated
1/3cupraw pine nuts1 tbsp. lemon juice
2 garlic cloves, peeled
1/2 tsp. sea salt
1/3cupolive oil
Salt and pepper, to taste
Instructions
Place a baking sheet in the oven and preheat it to 450. Prepare pizza dough according to the directions.
Roll out pizza dough on top of a sheet of parchment paper.
Blend ALL ABOUT THAT BASIL and all other pesto ingredients in a food processor until finely minced.
Layer pesto on top of the pizza dough, then fresh mozzarella and mushrooms.
Slide the parchment paper with pizza onto the hot baking sheet in the oven. Bake for 10-12 minutes, or until golden brown.
Allow to cool slightly before topping with MICRO-TOPIA and shaved parmesan. Slice and enjoy!
Notes
Store remaining pesto in a sealed jar in the refrigerator or freeze within four days.
