CREAMY TOMATO BASIL PASTA

A one pot meal that comes together easily but is full of flavor. Perfect when you need a cozy meal quick or while entertaining guests.

1/2 cup 80 Acres Farms ALL ABOUT THAT BASIL 2 cups 80 Acres Farms FIREWORKS TOMATOES, halved 1 lb. dry fettuccine 1 cup pesto 28 oz. marinara sauce 1/3 cup red enchilada sauce 1/2 cup sun dried tomatoes, oil drained and chopped 4 oz. goat cheese 1/2 cup heavy cream 6 oz. fresh mozzarella Salt and pepper, to taste

Instructions

Preheat oven to 375°.
In a large pot, cook pasta according to directions. Drain the pasta and add it back into the hot pot.
To the pasta, add the pesto, marinara, enchilada sauce, sun-dried tomatoes, goat cheese, and cream. Salt and pepper to taste. Gently toss until a creamy sauce has formed.
Transfer pasta to a 9×13″ baking dish and scatter the mozzarella on top.
Bake for 10-15 minutes.
Remove from oven and allow to slightly cool.
Top with fresh tomatoes and basil. Serve & enjoy!
