BBQ CHICKEN SUMMER SALAD

This BBQ Chicken Summer Salad is everything you love about a backyard barbecue all in one delicious salad. Smoky dry rubbed chicken breasts paired with a sweet barbecue sauce, bright kernels of grilled corn, fresh crisp greens all topped with a creamy homemade ranch dressing!

Ingredients

For the Chicken

  • 1 ½ lb. chicken breast, boneless, skinless
  • 2 Tbsp. olive oil divided
  • 3 tsp dried BBQ seasoning
  • Salt and pepper to taste
  • ½ cup BBQ sauce

For the Salad

  • 2 Ears corn shucked with silk removed
  • 4 oz. 80 Acres Farms FOREVER SUMMER
  • 1 ½ cups cherry tomatoes halved
  • 1 cup canned black beans rinsed and drained
  • 1 avocado sliced
  • ½ cup red onion sliced
  • 1 cup shredded sharp cheddar cheese

For the Homemade Ranch

  • 2 tsp pressed garlic
  • 2/3 cup buttermilk
  • ½ cup mayo
  • ½ cup sour cream
  • ½ tsp mustard powder
  • ¼ cup dill finely chopped
  • 3 Tbsp. chives finely chopped
  • 2 Tbsp. flat-leaf parsley finely chopped
  • 2 Tbsp. 80 Acres Farms BASIL finely chopped
  • Salt and pepper to taste

Instructions

  • In a large bowl, drizzle olive oil over the chicken. Add BBQ seasoning, salt and pepper to both sides.
  • Heat remaining olive oil over medium-high heat. Add chicken to the pan in a single layer and cook until golden brown, reaching an internal temperature of 165 degrees F, about 6-8 minutes. Set aside and baste with the BBQ sauce.
  • Add corn cobs to pan, and cook, turning, until charred and tender, about 5-10 minutes; let cool before cutting the corn kernels off the cobs.
  • For dressing, combine all ingredients and whisk until smooth.
  • To assemble the salad, place lettuce in a large bowl; top with chicken, corn, tomatoes, black beans, avocado, red onion and cheese. Pour the ranch dressing on top of the salad and enjoy!
