POWER CRUNCH BUDDHA BOWL

Ingredients

FOR THE BOWL

  • 4 oz. 80 Acres Farms POWER CRUNCH
  • 1 medium sweet potato cubed and roasted
  • 2-3 small rainbow carrots shaved
  • ½ cup brown rice cooked
  • 1 can chickpeas drained and rinsed
  • ¼ pre-cooked beet sliced

FOR THE DRESSING

  • ¼ cup olive oil
  • 1 tbsp. fresh lemon juice
  • ½ oz. 80 Acres Farms ALL ABOUT THAT BASIL optional

Instructions

  • Pre-heat oven to 425°. Dice sweet potato into 1" pieces and drizzle with olive oil. Bake for 25 minutes. Flipping halfway. Let cool.
  • Cook rice according to package. Let it cool slightly.
  • In a small bowl, add extra-virgin olive oil and fresh lemon juice. Lightly whisk. Add finely chopped basil.
  • Add all salad ingredients to a bowl of POWER CRUNCH.
  • Drizzle with dressing and enjoy.
