ROMAINE CALM TACOS

Try a new twist on your Tuesday tacos by balancing sweet and spicy for an easy weeknight dinner!

Ingredients

FOR THE TACOS

  • 4 oz. 80 Acres Farms ROMAINE CALM
  • 2 snacking cucumbers thinly sliced
  • 1 rotisserie chicken
  • 1 red onion pickled
  • 6 soft tortillas
  • 4-8 fresh mint leaves
  • 1 fresh jalapeños thinly sliced
  • 1 cup plain Greek yogurt
  • fresh lime juice

FOR THE PICKLED ONIONS

  • 1 red onion thinly sliced
  • ½ cup water
  • ½ cup apple cider vinegar
  • 1 ½ tbsp. honey
  • 1 ½ tsp. sea salt
  • ¼ tsp. red pepper flakes optional

Instructions

FOR THE TACOS

  • Debone and shred chicken.
  • Heat tortillas.
  • Assemble your tacos with chicken, ROMAINE CALM, pickled onion, cucumbers, and jalapeños.
  • Add yogurt, mint, and lime, as desired.

FOR THE PICKLED ONIONS

  • Thinly slice red onion and place in a mason jar.
  • In a pot, bring all remaining ingredients to a boil.
  • Pour the liquid over the red onions and seal the jar for 30 minutes.
  • Store in refrigerator for up to 1 week.
