1 snacking cucumber, quartered
2 celery ribs, sliced plus more for dipping if desired
3-4cupscauliflower florets1 can chickpeas, drained, rinsed, and patted dry
1/2cupbuffalo sauce1/4 head red cabbage, thinly sliced
1/4cupblue cheese, crumbled
your favorite blue cheese dressing
Instructions
Preheat oven to 425°.
Place cauliflower and chickpeas on a baking sheet. Coat with olive oil. Roast for 20 minutes. Remove from oven and pour on buffalo sauce. Toss to coat. Roast for another 10-15 minutes, until chickpeas are crispy.
Add all salad ingredients to a bowl of FOREVER SUMMER.
