4 boneless, skinless chicken breasts salt and pepper, to taste 2 tbsp. olive oil 1 tsp. garlic powder 1 tsp. Italian seasoning 4 slices mozzarella cheese 1/2 cup pesto 1/2 cup 80 Acres Farms FIREWORKS TOMATOES, halved 1 tbsp. fresh lemon juice 1/2 cup packed 80 Acres Farms ALL ABOUT THAT BASIL, thinly sliced cracked pepper, to taste

Instructions

  1. In a large bowl combine chicken, salt and pepper, olive oil, garlic powder, and Italian seasoning. Toss to combine.
  2. In a large, heated skillet sear the chicken over medium-high heat for about 6-8 minutes on each side until the internal temperature is 165°.
  3. Top each piece of chicken with mozzarella and cook until melted.
  4. Toss tomatoes, lemon juice, and ALL ABOUT THAT BASIL together. Top each chicken breast with about 3 tbsp. pesto and a scoop of tomato mixture.
  5. Finish with freshly cracked pepper. Serve immediately and enjoy.
