4oz. 80 Acres Farms POWER CRUNCH1 medium sweet potato, cubed and roasted
2-3 small rainbow carrots, shaved
1/2cupbrown rice, cooked
1 can chickpeas, drained and rinsed
1/4 pre-cooked beet, sliced
FOR THE DRESSING
1/4cupolive oil1 tbsp. fresh lemon juice
1/2oz. 80 Acres Farms ALL ABOUT THAT BASIL, optional
Instructions
Pre-heat oven to 425°. Dice sweet potato into 1″ pieces and drizzle with olive oil. Bake for 25 minutes. Flipping halfway. Let cool.
Cook rice according to package. Let it cool slightly.
In a small bowl, add extra-virgin olive oil and fresh lemon juice. Lightly whisk. Add finely chopped basil.
Add all salad ingredients to a bowl of POWER CRUNCH.
