Caprese Chicken

CAPRESE CHICKEN

All the summer flavors of the beloved classic salad are made into a quick and easy family meal any night of the week, and honestly, good enough for company.

Ingredients

  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 2 tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. Italian seasoning
  • 4 slices mozzarella cheese
  • ½ cup pesto
  • ½ cup 80 Acres Farms FIREWORKS TOMATOES halved
  • 1 tbsp. fresh lemon juice
  • ½ cup packed 80 Acres Farms ALL ABOUT THAT BASIL thinly sliced
  • pepper to taste

Instructions

  • In a large bowl combine chicken, salt and pepper, olive oil, garlic powder, and Italian seasoning. Toss to combine.
  • In a large, heated skillet sear the chicken over medium-high heat for about 6-8 minutes on each side until the internal temperature is 165°.
  • Top each piece of chicken with mozzarella and cook until melted.
  • Toss tomatoes, lemon juice, and ALL ABOUT THAT BASIL together. Top each chicken breast with about 3 tbsp. pesto and a scoop of tomato mixture.
  • Finish with freshly cracked pepper. Serve immediately and enjoy.
