PERFECT SPRING SALAD

FOR THE SALAD

(2) 4 oz. 80 Acres Farms FRESH SQUEEZE
1/2 seedless cucumber, sliced
34 radishes, thinly sliced
6 artichoke hearts, drained and halved
68 asparagus stalks
1 tsp. olive oil
Salt, to taste
3 tbsp. fresh dill, chopped
3 tbsp. fresh mint, chopped

FOR THE DRESSING

1 lemon, juiced
1 tbsp. champagne vinegar
1/4 cup olive oil
2 garlic cloves, finely chopped
1 shallot, finely chopped
Salt and pepper, to taste

Instructions

  1. Preheat oven to 425°.
  2. Trim asparagus stalks and place on sheet pan. Coat with 1 tsp. of olive oil, season with salt, as desired then bake for 10-12 minutes.
  3. In a bowl, add all dressing ingredients. Gently whisk them together. Set aside.
  4. Add all salad ingredients to a serving bowl of FRESH SQUEEZE.
  5. Drizzle with dressing and enjoy!
