KOREAN BEEF TACOS

FOR THE KOREAN BEEF

4 Tbsp brown sugar

4 Tbsp soy sauce or Tamari

2 tsp sesame oil

1/2 tsp crushed red pepper flakes

1/2 tsp ground ginger

4 tsp olive oil

4 cloves garlic, minced

16 oz grass-fed ground beef

FOR THE SRIRACHA MAYO

1 cup mayonnaise

1 Tbsp Sriracha

3 tsp lime juice

FOR THE TACOS

4 oz 80 Acres Farms HERBIVORE

Mini flour or corn tortillas

1 cup chopped kimchi

1/2 cup red onion diced

Instructions

  1. Mix brown sugar, soy sauce, sesame oil, red pepper flakes, and ginger in a small bowl and whisk together.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook for about 1 minute. Add ground beef and cook until browned. Drain any excess fat.
  3. Stir in the sauce until combined; allow to simmer for 2-3 minutes, and set aside.
  4. Whisk the Sriracha, mayo, and lime juice in a small bowl.
  5. Serve ground beef in tortillas topped with HERBIVORE, kimchi, red onion, and drizzled with Sriracha mayo.
