Korean Beef Tacos

Switch up your tacos tuesdays with this delicious Korean beef recipe topped with crunchy kimchi and a little spice with a Sriracha mayo!

Ingredients

FOR THE KOREAN BEEF

  • 4 tbsp. brown sugar
  • 4 tbsp. soy sauce or Tamari
  • 2 tsp. sesame oil
  • ½ tsp. crushed red pepper flakes
  • ½ tsp. ground ginger
  • 4 tsp. olive oil
  • 4 garlic cloves minced
  • 16 oz. grass-fed ground beef

FOR THE SRIRACHA MAYO

  • 1 cup mayonnaise
  • 1 tbsp. Sriracha
  • 3 tsp. lime juice

FOR THE TACOS

  • 4 oz. 80 Acres Farms HERBIVORE
  • Mini flour or corn tortillas
  • 1 cup kimchi chopped
  • ½ cup red onion diced

Instructions

  • Mix brown sugar, soy sauce, sesame oil, red pepper flakes, and ginger in a small bowl and whisk together.
  • Heat olive oil in a large skillet over medium heat. Add garlic and cook for about 1 minute. Add ground beef and cook until browned. Drain any excess fat.
  • Stir in the sauce until combined; allow to simmer for 2-3 minutes, and set aside.
  • Whisk the Sriracha, mayo, and lime juice in a small bowl.
  • Serve ground beef in tortillas topped with HERBIVORE, kimchi, red onion, and drizzled with Sriracha mayo.
