FOR THE WRAPS
4 oz . 80 Acres Farms POWER CRUNCH
3 -4 whole wheat tortilla wraps
1 large sweet potato, sliced into wedges
1/2 cauliflower, chopped
Olive oil
2 -3 tsp. chili powder
2 tsp . garlic powder
1 tsp . cinnamon
Salt and pepper, to taste
1/2 red onion, sliced thin
1/4 cup pumpkin seeds
FOR THE SAUCE
1 cup Greek yogurt , plain
1 -2 tbsp. maple syrup
1 tsp . chili powder
1 tsp . garlic powder
1/2 tsp . cayenne pepper
Salt and pepper, to taste
Instructions
Preheat oven to 400°. Line two baking sheets with parchment paper. Place sweet potato wedges on one sheet and cauliflower on the other.
Drizzle both with olive oil and sprinkle with spices, reserving the cinnamon for the sweet potatoes only.
Toss to coat and roast for 20-25 minutes until golden.
Add all sauce ingredients to a bowl and stir until combined. Adjust according to your taste.
Layout out the wraps. Spread sauce on first. Next, layer with POWER CRUNCH. Add roasted vegetables, sliced red onion, and pumpkin seeds. Enjoy!
