BLT Picnic Salad

This is your favorite summer sandwich turned into a crisp salad—perfect for cookouts and picnics!

Ingredients

FOR THE SALAD

9 oz. 80 Acres Farms FOREVER SUMMER

9 oz. 80 Acres Farms FIREWORKS TOMATOES, halved

8 slices bacon

1/2 red onion, thinly sliced

1 large ripe avocado, sliced

2 cups croutons

FOR THE DRESSING

1/2 cup plain Greek yogurt

3 tbsp. buttermilk

23 tsp. fresh lemon juice

2 tsp. fresh chives, chopped

2 tsp. fresh dill, minced

2 tsp. parsley, minced

1/2 tsp. garlic powder

1/2 tsp. onion powder

Instructions

  1. Preheat the oven to 400º and place parchment paper on a baking sheet.
  2. Place bacon on parchment paper and cook for 14-18 minutes, depending on the desired crispness.
  3. Remove pan from oven and lay bacon on a paper towel-lined plate to cool and absorb extra fat.
  4. Once cooled, crumble or cut bacon into small bite-sized pieces.
  5. In a small bowl, add all dressing ingredients.
  6. Whisk together until the ingredients are smooth and creamy. Set aside.
  7. Layer FOREVER SUMMER in a shallow serving bowl.
  8. Add FIREWORK TOMATOES and remaining salad ingredients.
    Note: Fan the avocado for a stellar presentation.
  9. Drizzle dressing over the salad and enjoy!
